i love smoothies. for some bizarre reason, i love fruit and know that it’s good for me, but cannot get into the habit of eating it unless i force myself. about five months ago i started to make myself smoothies in the morning for breakfast, thus getting all my servings in one shot. genius, no? and i always pour a little cup for j, too.
i basically just blend whatever fruit we have laying around with some soy milk and crushed ice, and i always, always add in some flax seed (there are those omega-3s again!).
some other recent favorites adapted from vegetarian cooking for everyone.
2 nectarines or peaches
1 large mango
1 1/2 cups soy milk
a few drops of vanilla
6 ice cubes
fresh lemon or lime juice to taste
pear and apple smoothie
1 cup apple juice (the recipe called for pear, but i didn’t have it)
1 ripe pear
2 drops almond extract
1 cup soy milk
and for the adults…
pineapple-coconut milk drink
2 cups fresh pineapple (or canned)
1 15-ounce can unsweetened coconut milk
a splash of rum
