after reading this article in cookie, i made a mental note to try out these lettuce wraps (and that was before j even came to live with us). the article says that it’s all about  strategy in getting a child to try new things, in this case, lettuce.  j refuses to eat salad, and although i totally get it (i know of few children his age that will), i thought i’d give it a try anyway, especially since he tried, and actually loved, the vegetarian lettuce wraps at p.f. changs. i decided to sub the pork in the recipe with tofu.

the verdict on this recipe?  it was a no-go. he wouldn’t even try the lettuce, but did eat, and actually liked, the filling.

would i try this one again? most likely not. it didn’t have enough oomph to it. i found the p.f. changs recipe here, but with the many ingredients it calls for, that probably won’t happen either. looks like we’ll have to just look forward to the real deal at the restaurant.

Lettuce Wraps (adapted from here)

  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 package firm tofu, diced
  • 1 teaspoon Chinese five-spice powder
  • 1 tablespoon soy sauce
  • 2 tablespoons brown sugar
  • 8 to 10 lettuce leaves
  • 1 carrot, shredded
  • 1 cucumber, peeled and julienned
  • Chopped peanuts (optional)
  •  

    1. In a sauté pan over medium-high heat, cook the garlic in the oil until fragrant, about 3 minutes.
    2. Add the tofu, five-spice powder, soy sauce, and brown sugar and cook until the tofu is browned, 8 to 10 minutes.
    3. Scoop the tofu mixture into the lettuce leaves. Garnish with the carrot, cucumber, and peanuts (if using).
